Sucralose is about 600 times sweeter than sucrose and, depending on the application, can be used as an alternative to nutritional sweeteners such as white sugar or glucose syrup.
Sucralose is thermally stable in cooking and baking and performs well in a variety of food and beverage systems, including low pH environments and the presence of viable bacteria.
Foods and beverages formulated with sucralose elicit a lower glycemic response than similar products containing sugar.
Unlike sucrose and glucose, sucralose has the added benefit of maintaining tooth mineralization and does not cause caries.
