Captain Redighieri Handmade Chocolate Bean to Bar
"From the cocoa foot to the chocolate bar."
The same hands that plant cocoa model chocolate. Our production of
cocoa is made in family farming system. We seek to identify and present
a different terroir considering the location of our cocoa plantations that are
cultivated in the Capitão and Redighieri Sites, which are located in the first Municipality
founded by Italian immigrants from Brazil, Santa Teresa/ES, Brazil. Also
we consider other types of cocoa origins for our tests, comparations and
learning, however, our main objective is to transform the cocoa produced in the
Sites Captain and Redighieri in chocolate. In the production process we start with
planting of cocoa seedlings through fruit harvesting, fermentation, roasting and
production of "Tre to Bar" chocolates. We seek to offer a chocolate with
natural characteristics, without the addition of flavourings, preservatives.
